This gold mine is big data which you could be collecting at your restaurant. Big data may be analyzed computationally to reveal patterns, trends, and associations with the purpose optimizing operations and increasing profit margins. Some examples of big data that could be utilized in your restaurant industry include a management app on your phone in order to view live information, a food delivery app in order to reach out to more customers, or a POS system that will ultimately be one of the main sources of gathering big data. There are five vectors that describe what big data is: volume, velocity, variety, variability, and complexity.
VOLUME
- Definition: The sheer amount of data being collected
- Examples: The number of payment transactions your restaurant processes on a daily basis, how many people ate at your restaurant on a given night, or how many specific menu items were sold
VELOCITY
- Definition: How fast new data is being generated
- Examples: The influx of customers for lunch time
VARIETY
- Definition: The type of data being collected
- Examples: The images patrons are posting on their Instagram, the tweets people post on their Twitter, or customers’ preferences aggregated into a customer management app
VARIABILITY
- Definition: The discrepancy of the data that is obtained from various sources
- Examples: An influx of customers coming in at a period of time due to social media, or an event happening nearby
COMPLEXITY
- Definition: Shaping data that is coming from multiple sources in a way that is meaningful
- Examples: A reporting system in order to view average sales per hour, or a delivery app in order to track and deliver food from online orders
Not all five vectors are necessary when working with big data; any combination of the five vectors is enough to start transforming the big data that you could be collecting in a meaningful way. Here are three examples of how collecting collecting big data could help optimize your restaurant operations:
Menu Item Selection (volume, velocity)
Big data could be a useful tool in order to understand which tastes are popular at your restaurant. This is important as you want to revise your menu by getting rid of unpopular dishes over time and add dishes that are more popular. For example, Food Network and Wired conducted a study to show that many foods receive a huge increase in rating when bacon was added to a menu item. The analytics obtained from big data doesn’t just allow you to know the type of food you want to put on your menu, but also allows you to tailor the pricing and marketing efforts that go along with it. The more menu items you have on your menu that people enjoy, the greater the chances you will have happy, return customers!

Labor Management and Costs (volume, variety, variability)
Imagine if you knew the ratio of labor costs to sales, overtime pay, the total number of vacation / sick leaves employees have taken, and gross sales from a similar time a year ago. With this information, managers and restaurant owners can make better decisions to accommodate for busy and/or slow times during the day, have the appropriate amount of employees at the restaurant based on previous gross sales and prepare the kitchen before an expected busy time. This ensures you are fully prepared for the influx of customers as well as saving copious amounts of time in organization.
Customer Relationship Management (variety, complexity)
What if there was a customer that came on a consistent basis for lunch that had dietary restrictions? What about customers that come only once? The experience that a patron receives at your restaurant by remembering his/her dietary needs is heavily correlated to the probability that the patron would return. This is important for your restaurant because it allows you to expend your limited resources on customers that have a higher probability of returning to the restaurant, as well as improving the experience the customers received with previous data stored about them.

However, having the right tools reduces time spent organizing, categorizing, and finally, transforming the data. All the decisions your restaurant is making will then be based off of all the historical, transformed data as opposed to making decisions off of intuitions.
Streetfightmag.com provides a case study from Fig & Olive, a seven-location New York-based restaurant group, to show the advantages of leveraging big data. Fig & Olive was able to reach out to as many guests as possible and create an effective campaign to obtain return customers. This ties in with the variety of data they collected from Facebook, Twitter and Tripadvisor to reach the volume of data that they had. In addition, they were able to reduce complexity of the data in order to transform it to something understandable: a campaign to increase the number of return guests at Fig & Olive.
Fig & Olive’s guest management system has been set up to match reservations to POS data, which allows Joseph to track the dining habits and visit frequency of guests. This information is then used to run automated marketing campaigns, such as the “we miss you campaign” that Fig & Olive ran in 2014. As part of the campaign, the restaurant group offered complimentary crostini to guests who had not visited in the last 30 days. According to Venga’s own data, the campaign resulted in 300 visits and more than $36,000 in sales — 7x the cost of the program itself.

Big data helps with understanding what part of your restaurant’s workflow can be optimized. Big data can help answer questions like:
- How much time can be shaved off the average time a customer stays in the restaurant in order to increase table turnover rate
- Better customer insights in order to increase customer loyalty
- How many employees can be sent home during a slow period of the day in order to cut labor costs

However, this would create a profit squeeze that a restaurant owner may be unaware of because potential profits that are not earned could also be viewed as a decrease in profits. This discrepancy between how much profit a restaurant is currently making versus how much profit a restaurant could be making is why many restaurant owners are turning to big data to answer how to widen this gap; SMB Group states that 18% of small and 57% of medium businesses are already using some sort of analytical tools today!
